Plant Source - Snow Lotus Fruit
The snow lotus fruit, also known as yacon, is a root vegetable from the Andes mountains in South America, where it has been a traditional food of the indigenous people for over 500 years. Nutritional content includes carbohydrates, fats, proteins, fiber, fructooligosaccharides, vitamins A, C, and E, and carotenoids. Consuming yacon helps regulate blood, lower blood sugar, lipids, and cholesterol, and can prevent and treat hypertension and diabetes, as well as aid digestion and promote regular bowel movements. The edible part of the yacon is its tuber, which resembles a sweet potato. It is juicy, starch-free, and can be eaten raw, stir-fried, or cooked, with a crisp texture and slightly sweet, refreshing taste. It can be eaten raw after washing and peeling, or cooked in soups with chicken or pork ribs.
