Plant Source – Ume
Ume, also known as dried near-mature fruit of the Prunus mume plant from the rose family, is commonly cultivated in various regions of China, particularly south of the Yangtze River. It contains citric acid, malic acid, succinic acid, sugars, stigmasterol, waxy substances, and ursolic acid-like compounds, as well as bitter acids and bitter almond glycosides, and superoxide dismutase. Ume is high in fruit acids and anthocyanins, with low sugar and mineral content, making its primary benefit the antioxidant properties of anthocyanins. Ume has a predominantly sour taste with a mild sweetness and is commonly consumed as dried ume soaked in water with added sugar for a tangy-sweet flavor. It can be eaten fresh or used in beverages, solid drinks, meal replacement powders, food additives, and functional foods.
